Pen Tool in Illustrator (macOS)
Press P to pick the Pen tool.
What it does
The Pen tool draws a path point by point. A click sets a corner point and gives a straight segment. Clicking and dragging sets a smooth point and pulls out the handles that bend the curve. Clicking the first point again closes the shape. It takes practice, because the curve is shaped by the handles and not by the line you drag.
